  • 1 cup flour
  • 2 tbsp. brown sugar
  • 1 tbsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 egg
  • 1-1/4 cups milk
  • 2 cups Post Bran Flakes
  • 1/2 cup applesauce
  • 12 fruit cookies, chopped


  1. Preheat oven to 400°F. Mix flour, sugar, baking powder and cinnamon in large bowl; set aside. Beat egg and milk with wire whisk in medium bowl until well blended. Stir in cereal. Let stand 5 minutes. Stir in applesauce. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Gently stir in cookies.
  2. Spoon batter evenly into muffin cups sprayed with cooking spray, filling each to the top.
  3. Bake 20 to 25 minutes or until golden brown. Cool in pan 5 minutes; remove from pan. Serve warm.

Tips and Suggestions

Special Extra: Cut in half and spread with 2 Tbsp. cream cheese spread for a carrot cake-like flavor.
