Bananas Foster Breakfast Casserole

Ingredients

Casserole:

  • 1 - 1/2 cups rolled oats
  • 1/2 cup Grape Nuts Cereal
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts, divided
  • 1 cup sliced bananas (from 2 medium bananas)
  • 2 cups plain (unsweetened) almond milk
  • 1 egg
  • 3 tablespoons mashed banana 
  • 2 teaspoons rum extract

Topping:

  • 1 cup low-fat Vanilla yogurt
  • 1 teaspoon rum extract
  • Banana slices
  • Ground Cinnamon 

Directions

  1. Preheat oven to 375 degrees F. 
  2. In a large bowl, mix together the oats, Grape Nuts Cereal, brown sugar, baking powder, cinnamon, salt, 1/4 cup walnuts, and 1 cup bananas.
  3. In another large bowl, whisk together the milk, egg, mashed bananas, and rum extract.
  4. Coat a 9 x 9 inch baking dish with non-stick cooking spray.  Add the oat mixture to the baking dish.  Pour the egg and milk mixture on top.  Sprinkle the remaining 1/4 cup walnuts on top.
  5. Bake 30-35 minutes or until set and the top is golden brown.  Cool 5 minutes before slicing. 
  6. While the casserole is cooling, combine the yogurt and rum extract for the topping.  
  7. Serve with a dollop of yogurt, slice of banana, sprinkle of cinnamon
